How To Disable Automatic Updates in WordPress
The easiest way to do that is by installing and activating Easy Updates Manager plugin.
Once, you have installed and activated the plugin, go to Dashboard > Updates Options.
You can choose Disable all updates but I don’t recommend you because it will prevent all update notifications from appearing.
You can choose the setting you want. You can disable plugin and theme auto updates but leave the Standard WordPress Core updates enabled.
Note: I recommend you to choose Disable auto updates instead of Disable plugin updates and Disable theme updates because if you choose these option then your update notifications won’t even appear.
This plugin keeps a record of what’s updated. So, if something goes wrong you can go to Dashboard > Updates Options and then go to Logs tab and rollback to previous version.
